The Omcan BE-CN-0400 is an automatic electric pizza dough moulder that handles dough pieces from 1.76 ounces up to 17.64 ounces (50 to 500 grams) and presses them into rounds from 4 to 16 inches in diameter. For a pizzeria running 200 or more pies a day, hand-pressing each dough ball takes time and introduces inconsistency. This moulder lets one person feed dough balls in and get flat, even rounds out, freeing up your pizza maker to focus on topping and baking rather than rolling.
Adjustable Thickness and Diameter Control
Both the thickness and diameter are adjustable, so you can set the moulder to produce thin-crust rounds for New York style or thicker bases for Sicilian and pan pizzas without switching equipment. The rollers press the dough without heating it, which preserves the dough's fermentation and texture characteristics. This matters because heated or overworked dough loses elasticity and produces a tougher crust.
