The 1" thick steel griddle plate holds and distributes heat more evenly than thinner plates, which means fewer hot spots and more consistent browning across the entire cooking surface. Each of the 2 burners has its own thermostat adjustable from 200 to 450°F (93 to 450°F), so you can run one zone at 250°F for holding pancakes while the next zone runs at 400°F for searing burgers. That kind of independent control cuts down on the back-and-forth of adjusting a single knob for different menu items. Pre-heat time is approximately 15 minutes, which is fast enough to have the griddle ready before the first ticket comes in if you fire it up at the start of prep.
