The Revent COMPACT RACKS Proofer Cabinet
The Revent COMPACT RACKS proofer is the roll-in cabinet in Revent's Plug and Play line, sized for supermarket bake-off programs and retail bakeries that proof a full rack at a time. One US 18 in. x 26 in. rack up to 72.5 in. tall wheels straight into the stainless steel chamber, and PID regulation holds temperature and humidity from the top tray down to the bottom one. Oven-ready dough stays available through the day under the FSP Flexible Slow Proofing system instead of coming due all at once, which is what a staggered bake-off schedule actually needs. This is the proofer-only configuration, with no refrigeration section, so production plans built around overnight retarding or freezing fall outside its range. Installation asks for a level floor, 2 in. of clearance from any wall, and connections for a 208 to 220 V three phase supply, cold water, and a drain.
Roll-In Loading for One Full Rack
The chamber runs 25.6 in. wide, 33.4 in. deep, and 72.6 in. high, with a free doorway 25.5 in. wide and 72.6 in. tall, so a loaded rack rolls in from the bench in a single push. Set that against a shelf-loading cabinet and the whole business of transferring pans one at a time disappears from the proof cycle, and the trays stay level the entire way. Maximum dough capacity is 110 lb per load. Plan the aisle in front of the cabinet against the 43.7 in. body depth and the 49.2 in. overall depth shown on the installation drawing.
PID-Regulated Temperature and Humidity
A programmable touch screen panel sets and displays both temperature and humidity, and optimized PID regulation holds the setting without the sawtooth swings a simple thermostat produces. Fan speed is computer controlled across 200 steps, so airflow can be dialed gentle for laminated dough or firm for a dense rack. Slow proving at low temperature is where the aroma and structure develop, and the recovery curves are built to handle a mixed load of large and small pieces on the same rack. Croissants near the door finish on the same clock as the pans deep in the chamber.
Electromagnetic Steam Generator and Automatic Drains
Humidity comes from an electromagnetic steam generator that carries no mechanical or electrical parts inside the steam container, which is what keeps its output stable over a long service life. An external steam tank puts the lime where you can reach it for cleaning rather than inside the proofing chamber, and an internal nozzle mounted after the fan and the heating elements releases moisture into moving air. Automatic drain valves empty the cabinet circuit and the steam generator, so descaling never becomes a morning chore.
Stainless Steel Chamber and Sanitary Water Path
Interior and exterior are both stainless steel, and the chamber never receives cold water directly the way a cold water humidification system does, which removes the route bacteria would otherwise take into the proofing space. Water hardness and lime content do not impair the function or the life of the climate unit, so a site with ordinary municipal water is not fighting its own supply. Keep the water inside the published range and the generator stays out of the service log.
Plug and Play Installation and Utility Connections
The cabinet is factory-assembled in one piece and passes through a minimum intake opening of 32 in. x 44 in., so getting it running is a matter of rolling it onto a level floor rather than staging a build. Leave 2 in. of clearance from any wall and keep the front and the top open for access and ventilation. Utilities are a 208 to 220 V three phase supply at 12 A, a 1/2 in. cold water line at 35 to 45 PSI, and a 1 1/2 in. drain, with a 4 kW cabinet load. Options include a large touch screen control panel, interior lights, a door with a glass window, and the Flexbaker system.
