The Revent COMPACT REACH IN Proofer Cabinet
Fifteen pans at 1.6 in. spacing is the working unit of the Revent COMPACT REACH IN, the pan-loading cabinet in Revent's Plug and Play line. It stands on 5.7 in. legs and takes 18 in. x 26 in. sheet pans one at a time through a 26 in. doorway, which suits retail bakeries, cafes, and bake-off counters that stage product by the pan instead of by the rack. PID regulation holds temperature and humidity at every slide level, and the FSP Flexible Slow Proofing system keeps oven-ready dough coming through the day rather than all at once. Because this is the proofer-only configuration with no refrigeration section, overnight retarding and freezing sit outside what it does. Installation asks for a level floor, 2 in. of clearance from any wall, and connections for a 208 to 220 V three phase supply, cold water, and a drain.
Reach-In Loading for Fifteen Pans
The chamber runs 26 in. wide, 33.4 in. deep, and 61.3 in. high, and holds fifteen 18 in. x 26 in. pans on slides spaced 1.6 in. apart, enough for a morning of croissants, rolls, and sheet product in one cabinet. Each pan enters at working height through a 26 in. by 61.3 in. doorway, so one baker stages the whole proof without a rack or a second pair of hands. Where a roll-in cabinet asks for rack logistics, this one works pan by pan. Maximum dough capacity is 110 lb per load.
PID-Regulated Temperature and Humidity
A programmable touch screen panel sets and displays both temperature and humidity, and optimized PID regulation holds the setting without the overshoot a basic thermostat delivers. Fan speed runs on a computer-controlled 200 step range, turned down for laminated dough or up for dense pans. Slow proving at low temperature builds aroma and structure, and the recovery curves handle large and small pieces sharing the cabinet. Top slides and bottom slides finish together, so you pull the whole load at once.
Electromagnetic Steam Generator and Automatic Drains
An electromagnetic steam generator supplies the humidity and carries no mechanical or electrical parts inside the steam container, which is what keeps its output steady year after year. Cleaning happens at an external steam tank instead of inside the chamber, keeping lime out of the proofing space, and an internal nozzle mounted after the fan and the heating elements feeds moisture into moving air so it reaches every slide level. Automatic drain valves empty both the cabinet circuit and the generator.
Stainless Steel Chamber and Sanitary Water Path
Interior and exterior are stainless steel, and no cold water enters the chamber directly the way it does in a cold water humidification system, which closes off the usual path for bacteria into the proofing space. Hardness and lime content in the supply do not impair the function or the life of the climate unit. Hold the water inside the published range and the steam generator stays off the maintenance list.
Plug and Play Installation and Utility Connections
The cabinet is factory-assembled in one piece and passes through a minimum intake opening of 32 in. x 44 in., so it goes into service on a level floor without assembly work. Give it 2 in. of clearance from any wall and leave the front and the top open for access and ventilation. Utilities are a 208 to 220 V three phase supply at 12 A, a 1/2 in. cold water line at 35 to 45 PSI, and a 1 1/2 in. drain, with a 3.5 kW cabinet load. Options include a door with a glass window, interior lights, a large touch screen control panel, and the Flexbaker system.
