The Serv-Ware EHS-02 is the volume machine of Serv-Ware's hot dog line: a countertop steamer with the capacity to keep a couple hundred franks in rotation for stadium stands, busy convenience stores, and lunch-rush carts with power. When the crowd hits all at once, capacity in the cabinet is what keeps the line moving.

Big Batches Without the Dry-Out

Steam is a forgiving way to hold a large batch. Every frank in the cabinet sits in the same moist heat, so the last hot dog sold from a batch tastes like the first, with none of the shriveled, leathery casings that dry holding produces. Buns share the cabinet and stay soft in the humidity instead of hardening on a shelf.

Built for the Rush Hour Cycle

Start the pre-cooking cycle before the rush and the machine transitions into holding mode for service. Staff pull product out and drop fresh stock in through the top while the queue keeps moving. Between rushes, the gentle holding range keeps everything servable without continuing to cook it into mush.
