Each burner carries a high temperature knob with a set screw, which means the low flame you dial in for a beurre blanc holds there instead of drifting up while you plate. The 12 inch square cast iron grates are wide enough to land a single pan dead center or bridge a tall stock pot across a pair of burners.
Full Size Sheet Pan Oven
The oven below the burners takes a full size sheet pan loaded side to side or front to back, so nobody has to trim a tray or turn it sideways to make it close. Two racks across four positions let you roast on the bottom and finish bread up top in the same bake.
