The Serv-Ware SP72-20-HC-T Sandwich & Salad Prep Table
The Serv-Ware SP72-20-HC-T is a 72 inch refrigerated sandwich prep table for a sandwich, salad, or taco line that assembles to order and needs its toppings cold and within arm's reach for a whole shift. An eighteen pan rail in two rows sits above a three door cabinet, so a cook builds from the rail while backup product waits on the shelf directly below instead of in a walk-in across the kitchen. The cabinet holds 33°F to 41°F on 115 volt, 4.3 amp power from a standard NEMA 5-15 outlet. Plan on 71.7 inches of width, 29.9 inches of depth, and 51.12 inches with a door swung open, and keep it in a climate controlled room away from the fryer bank.
Eighteen Pan Rail with Included Pans and Cutting Board
The rail runs the full width in two rows: a five by two block on the left and a four by two block on the right, eighteen wells in all, over an opening 13.03 inches deep. Two rows is what separates a standard top from a mega top; every pan sits within a short reach of the board, and the board is long enough for two cooks to build sub rolls side by side without trading elbows. Serv-Ware packs the polycarbonate pans and the plastic cutting board in the carton.
The work surface sits 35.51 inches off the floor, counter height on a line that mixes prep tables with undercounter reach-ins.
Electronic Thermostat Holding 33°F to 41°F
An electronic thermostat with a digital LED readout runs the cabinet between 33°F and 41°F. Compared with a dial that reads in vague hash marks, the display shows the actual cabinet temperature, so the closer at midnight and the health inspector at noon see the same number without opening a door. The R290 system moves 1,365 BTU per hour from a half horsepower compressor, sized for a cabinet that gets opened and shut all through a lunch rush.
Defrost runs automatically every six hours and the condensate evaporates on its own, so there is no drain line to plumb and no pan to empty at close. The 3.35 ounce R290 charge and the foam insulation are both CFC free.
304 Stainless Framework over a Three Door Cabinet
Serv-Ware builds the framework from AISI 304 stainless steel, the grade that shrugs off the vinegar, citrus, and salt a prep rail drips into the seams all day, where a 430 grade would show rust spots within a season. The exterior is stainless as well. Inside, the walls are ABS plastic that wipes clean and the floor is 304 stainless, so a dropped pan of pickles lands on metal instead of scratched plastic.
Each of the three solid hinged doors gets its own PVC coated wire shelf and a magnetic gasket that pulls out and snaps back in without a screwdriver, which turns a torn gasket into a two minute swap instead of a service call. The interior stands 30.79 inches tall, room for stacked hotel pans of sliced tomato below a case of deli meat on the shelf. Casters are included but come uninstalled; fit them before the table goes into position and the unit rolls clear for mopping.
