The Somerset SPM-45 Dough Press
The Somerset SPM-45 is a hand-operated pastry and turnover machine that folds, crimps, trims, and seals a filled pastry in one turn of the crank. It is built for bakeries, pizzerias, cafes, restaurants, institutions, and ethnic food producers turning out empanadas, Jamaican patties, calzones, samosas, pierogies, and fruit pies by hand today. You lay a dough round on the die, spoon in the filling, rotate the handle half a turn, and a sealed, trimmed piece drops out the bottom, so one person can run up to 800 pieces an hour. The edge comes out sealed tight without brushing on egg wash or any other sealant. It is a manual bench machine for portioned, hand-fed production, not a conveyor line. There is nothing to plug in: set it on a prep table and it is ready to work.
One Half Turn Folds, Crimps, Trims And Seals
Hand crimping a turnover is three or four separate motions with a fork, a cutter, and a pastry brush. On the SPM-45 those steps collapse into a single half turn of the handle. The die closes the dough over the filling, presses a crimped edge, cuts away the excess, and releases the finished piece below the machine. Every empanada or patty leaves with the same fold line and the same crimp, which is what makes a tray of them look like a product instead of a batch of handwork.
Interchangeable Dies In Five Shapes
Somerset lists 18 dies for the SPM-45 in half round, triangular, rectangle, square, and rounded rectangle shapes. They run from a 2-3/8 in. by 1-3/8 in. triangle for bite-size appetizers up to an 8 in. by 4 in. half round for a full-size hand pie or calzone, with finished heights to 2-1/2 in. Changing the product is a matter of changing the die, so the same frame can make pot stickers in the morning and spinach pies in the afternoon.
Less Waste On Dough And Filling
Because the die trims every piece to the same outline and the filling sits in the same pocket each time, you stop overfilling some pieces and underfilling others. Somerset positions the machine on guaranteed savings on dough and fillings, and on a menu item sold by the dozen that consistency shows up directly in food cost.
Compact All Stainless Steel Frame
The machine is all stainless steel and takes up about 14 in. by 9 in. of bench space at 10 in. tall, light enough at roughly 30 lb to move between stations or store on a shelf. The simple open frame has no motor housing or electronics, so cleanup is a wipe-down of the die and side plates at the end of the shift.
