The Westlake EGG36S Manual Gas Griddle
The Westlake EGG36S is a 36 in. countertop gas griddle with a 5/8 in. thick plate over three 30,000 BTU/hr U-shape steel burners, 90,000 BTU/hr in total, each on its own manual control. Three zones give a line cook a hot section for burgers and cheesesteaks, a middle for eggs and hash browns, and a cooler end for holding or warming tortillas through the rush. It is sized for a diner, breakfast and lunch restaurant, or taqueria where the flat top is a main station, and it is more plate than a snack bar needs. It is set up for natural gas, stands on 3.9 in. adjustable legs, and takes 35.6 in. of counter width by 25.2 in. of depth, with 176 lb on the counter or stand.
U-Shape Steel Burners Rated at 30,000 BTU/hr Each
Under the plate are three U-shape steel burners rated at 30,000 BTU/hr each, 90,000 BTU/hr for the unit.
Each burner sits under about 12 in. of plate width and has its own knob, which gives you three zones. Keep one hot for burgers and another moderate for eggs, or turn a zone down between rushes and stop paying to heat plate you are not using.
5/8 In. Thick Griddle Plate
The griddle plate is 5/8 in. thick. Plate thickness is what decides how a griddle behaves under load: a thin plate heats fast but drops temperature the moment you cover it with cold product, while a thicker plate stores heat and gives it back. When a cook drops a row of frozen patties or a pile of hash browns, a 5/8 in. plate holds its heat better and recovers sooner, so the next round still browns instead of stewing.
The cost of that mass is a longer preheat, so light the griddle before prep, not when the first ticket prints.
Manual Controls with a Standby Pilot
Each burner has a manual control knob, marked for on and off, that sets flame height directly. Unlike a thermostatic griddle, nothing cycles the burner to hold a set plate temperature; the cook sets the flame and adjusts by watching the food. Experienced griddle cooks often prefer that directness, and it means fewer parts between the knob and the flame. A standby pilot keeps the burners ready to light, so a turn of the knob lights them without matches or a lighter.
Large Oil Collector at the Bottom
Grease scraped off the plate drains to a large oil collector at the bottom of the unit. A bigger collector means your cook is not stopping to empty it halfway through a bacon-heavy breakfast service. Pull it and wash it at close along with scraping and seasoning the plate.
Stainless Steel Front on Adjustable Legs
The front panel, where spills, splatter, and hands land all shift, is stainless steel, so it wipes down with a degreaser and a towel at close. The sides and back are galvanized steel, which is the honest tradeoff on this unit: those faces usually sit against a wall or neighboring equipment, and galvanized keeps weight and cost down where nobody is scrubbing daily.
Stainless steel adjustable legs lift the body 3.9 in. off the counter. That gap lets you level the unit on an uneven counter and get a towel underneath to clean. The control knobs are zinc alloy with a chrome coating, which stands up to heat and greasy hands better than plastic.
