The Migali C-CO1-SD-LP Gas Convection Oven
The Migali C-CO1-SD-LP is a single-deck liquid-propane convection oven sized for full-size sheet pan production in restaurants, bakeries, hotel kitchens, and catering operations on LP gas service. Five 18" x 26" pans load left-to-right or front-to-back on (5) nickel-plated racks across 13 rack-guide positions, so you can stage roasts, sheet cakes, dinner rolls, and wrapped pastries at exactly the spacing each batch needs. The dual-speed fan with adjustable cooling mode keeps airflow even across every pan, and the solid-state digital controller with Hold function locks in your finishing temperature so a tray of cookies coming out of a 350°F bake doesn't get pushed past color while the next sheet finishes.
46,000 BTU LP Burner System and 150°F to 500°F Range
Two stainless steel propane burners deliver 23,000 BTU each, totaling 46,000 BTU per oven. The 150°F to 500°F range is wide enough to hold proofed bread at the low end, finish prime rib in the middle, and roast vegetables hot at the top, all on the same machine through the day. Electronic spark ignition with automatic pilot fires the burners cleanly each time you call for heat, and the safety shut-off switch closes the gas valve if the pilot drops, so you don't have to manually relight after a cycle off. The 3/4" NPT rear gas connection and regulator is configured for LP, which makes this the right unit for food trucks, mobile catering rigs, outdoor installations, and any kitchen on tank-fed gas.
Five-Pan Capacity with 13-Position Rack Guides
The 29" x 24" x 27.7" interior accommodates five full-size 18" x 26" sheet pans, or you can stack hotel pans, half-size sheet pans, or wire roasting racks across the same 13 guide slots. The 13 positions give you tight spacing for low-clearance items like sheet cookies and wider spacing for tall items like turkey or stockpots, without buying extra accessory racks. The 50/50 dependent doors with double-pane thermal tempered glass let line cooks load and unload with one hand, and the interior light means you can spot-check browning without opening the door and dropping cavity temperature.
Solid State Digital Controller with Hold Mode
The solid-state digital controller replaces analog dials with a precise digital readout, and the Hold cooking-temperature feature lets the oven step down to a holding temp the moment your bake finishes. Pulling a sheet of croissants at 5:45 AM and need to keep the next batch at proofing temp until service? Set Hold and the burners cycle just enough to stay there. The fan delay switch pauses the convection fan when the doors open so cold kitchen air doesn't blast the food as you load. A Nema 5-15 plug runs the controller off a standard 115V outlet. No special electrical work for the control side.
Interior is enamel with coved corners, which wipes out faster than welded sheet metal seams and resists baked-on grease in busy bakery shifts. Exterior is stainless steel for daily wipe-down. An optional double-stack kit (Part # 1759-1586) lets you put a second C-CO1 on top to double capacity in the same floor footprint when production scales up.
