The proprietary SPITFIRE gas burner delivers up to 98,952 BTU maximum output with a working range of 69,266 BTU, providing rapid heat-up and sustained high temperatures. The R.H.S.® (Radiant Heat System) distributes heat evenly across the baking chamber, reaching working temperatures between 500°F and 1000°F and heating from cold to 572°F in approximately 100 minutes. The oven is convertible between gas types for installation flexibility.
Motorized Rotating Refractory Cotto Baking Floor
The 47" x 47" rotating baking floor is made from traditional refractory cotto material, delivering authentic heat retention and baking characteristics that replicate traditional wood-fired results. The motorized rotation eliminates the need for manual turning, ensuring even cooking across all positions. The interior chamber measures 55" x 55", providing ample clearance for loading and unloading with a standard pizza peel.
Heavy-Duty Construction with Metal Stand
