The Omcan PE-CN-36P31 is a single-chamber countertop gas pizza oven, the largest in the series at 32 inches wide, with two decks and 4 baking stones (15.25" x 20" x 0.5" each). The wider baking surface on each deck handles large pizzas or multiple items per level, making this the right choice for high-volume pizzerias, bakeries, and commercial kitchens that run continuous pizza and baked goods production throughout service.
Top and Bottom Heating with V-Shape Baffle (120 to 650°F)
The oven uses both top and bottom heating elements with a durable stainless steel heating element above and a U-shape gas burner below, so heat hits the pizza from both directions. The V-shape baffle inside the chamber distributes heat evenly across the baking surface, which prevents the common problem of one side of the pizza browning faster than the other. The temperature range of 120 to 650°F (49 to 649°F) gives you flexibility to bake at lower temperatures for slow-rise artisan doughs or crank up the heat for fast, high-temperature Neapolitan-style pies. Three rack positions with 2-3/4 inch spacing between them let you adjust stone placement to control how close the top of the pizza sits to the upper heating element. Pre-heat time is 15 to 20 minutes.
Insulated Double-Wall Construction with Stainless Steel Door
The insulated double-wall construction retains heat inside the baking chamber and keeps the exterior cooler to the touch, which matters in tight kitchen spaces where cooks work close to the equipment. The stainless steel door seals the chamber during baking and opens easily for loading and checking doneness. All-stainless-steel construction throughout the body and interior makes the oven durable enough for daily commercial use and easy to wipe down between batches. The unit runs on Natural Gas with a 3/4" NPT rear gas connection at 32,000 BTU per hour.
