The CMA Dishmachines EST-66 Conveyor Dishwasher
The CMA Dishmachines EST-66 is a 66" conveyor dishwasher rated at 249 racks per hour that adds a second wash station to the wash sequence, giving heavily soiled ware more contact time than a shorter conveyor can. High volume operations like hospitals, universities, and banquet kitchens run it in either high temperature or low temperature chemical sanitizing mode, matching the machine to their chemical program and ventilation reality.
249 Racks per Hour at 0.46 Gallons per Rack
The rated capacity of 249 racks, or 996 covers, per hour rides on a 6.75 ft/min conveyor, letting the crew feed racks end to end instead of pausing for door cycles. Water use at the final rinse is only 0.46 gallons per rack, 114.54 gallons per hour flat out, so the extra wash capacity does not come with extra water cost. Automatic water control and auto fill hold tank levels, while auto start/stop idles the pumps whenever the chamber is empty.
Multi-Stage Wash Process with Power Rinse
Four stages work every rack across 66" of machine: a 2.5 gallon pre-wash tank knocks off loose soil, an 11.75 gallon wash tank scrubs, a 4.25 gallon power heated rinse follows, and a fresh water final rinse finishes, for 18.5 gallons of total tank capacity. That pre-wash stage is the difference between this machine and a 44" conveyor, since baked-on food gets loosened before the main wash instead of riding through it. Each tank feeds a 52 GPM pump, driven by a 1 HP wash pump and 1/3 HP rinse pump, with a 1/8 HP conveyor motor moving the line, while a 13 kW wash tank heater and 3 kW rinse tank heater, both chemical resistant industrial grade, hold temperature through continuous racks.
High Temperature or Low Temperature Sanitizing
In high temp mode the wash runs 150°F to 160°F, the pumped rinse holds 160°F, and the final rinse sanitizes at 180°F to 195°F. In low temp mode, chemical sanitizing lets wash, pumped rinse, and final rinse all run at 140°F to 150°F, easing exhaust and water heating loads. You choose between chemistry cost and energy cost based on your own utility rates and hood capacity.
Rack Saver Clutch and Automatic Soil Purging
A table limit switch and rack saver clutch system protect the machine, dishracks, and tables by stopping the drive before a jam turns into damage. The automatic soil purging system filters wash water and traps plate debris in an external stainless steel tray you can pull and rinse in seconds, keeping wash water cleaner deep into a banquet push. Curtains lift out for cleaning, the 19" opening takes larger wares and utensils, and the whole machine is stainless steel, with a 316 grade stainless steel chemical injection chamber at the point of highest chemical exposure. One open rack and one peg rack come with the machine, and you specify left or right rack travel when ordering.
Features & Benefits
-
Sized for the highest volume dishrooms, including hospitals, universities, and banquet kitchens, where heavily soiled ware needs more wash contact time than a shorter conveyor provides.
-
Washes up to 249 racks or 996 covers per hour on a 6.75 ft/min conveyor.
-
A 4-stage washing process runs two wash stations, a power heated rinse, and a final rinse across 66" of machine.
-
Three tank sections hold 2.5 gallons of pre-wash, 11.75 gallons of wash, and 4.25 gallons of power rinse water, 18.5 gallons total, so loose soil comes off before the main wash.
-
Operates as a high temperature machine or a low temperature chemical sanitizing machine to fit your chemical program and ventilation setup.
-
Uses only 0.46 gallons of water per rack at the final rinse, so the extra capacity does not raise water costs.
-
A 1 HP wash pump and 1/3 HP rinse pump each move 52 GPM, and a 1/8 HP motor drives the conveyor.
-
The 13 kW wash tank heater and 3 kW rinse tank heater are chemical resistant industrial units built to outlast commercial grade elements.
-
Power rinse heater system keeps rinse temperature from sagging under continuous racks.
-
Automatic water control system and auto fill maintain tank levels without operator attention.
-
Auto start/stop idles the pumps whenever the chamber is empty, trimming energy use over a shift.
-
Automatic soil purging system filters wash water and traps plate debris in an external tray that slides out for fast cleaning.
-
Table limit switch and rack saver clutch system stop the drive before a jammed rack damages the machine, racks, or tables.
-
A large 19" opening accepts sheet pans, trays, and oversized utensils.
-
Curtains lift out and drop back in easily for nightly cleaning.
-
Single control switch activation makes startup one-touch simple.
-
All stainless steel construction includes a 316 grade stainless steel chemical injection chamber at the point of heaviest chemical exposure.
-
Includes one open rack and one peg rack; specify left or right rack travel when ordering.
