The LBC Bakery LRP2N-100 Roll-In Proofer
Eight racks side-loaded, eight end-loaded, or three doubles: the LBC Bakery LRP2N-100 is one of the largest cabinets in the 58.4-inch wide family, a proofing room in appliance form. Where production has outgrown batch-at-a-time thinking, this cabinet ferments the whole schedule at once and meters racks out through two doors as the ovens need them. Racks are not included with the cabinet.
Two Doors, Separate Access
An eight-rack chamber cannot afford to lose its atmosphere every time someone needs one rack. The two-door face splits access so most of the load stays sealed during any pull, with magnetic seals and automatic closers doing the discipline and full-width bar handles doing the bodywork. Rack flow through a shift becomes a rhythm rather than a compromise.
Air-Wash Heat And Humidity
Uniformity across eight rack positions is the entire engineering problem, and the air-wash system solves it with constant conditioned airflow that denies the chamber any dead corners. Every rack rides the same temperature and humidity curves under PID control that does not overshoot, so product consistency holds from position one to position eight. A higher-output heating package sized for the volume, built on non-submerged tubular elements, brings the big chamber to condition quickly and holds it there through door traffic.
Cam-Lock Panel Construction
No eight-rack proofer arrives whole; this one arrives as foam-insulated modular panels and cam-locks together where it will run. The 300 series stainless interior takes washdowns and rack contact behind full perimeter bumpers, interior lighting makes an eight-rack visual check practical, and the heavy-duty stainless exterior sets zero clearance against combustible walls at sides and back. Options: rugged stainless steel floor, 72610-48 water filtration system, correctional package.
