The LBC Bakery LRP2N-30 Roll-In Proofer
The LBC Bakery LRP2N-30 is the shortest cabinet in LBC Bakery's 58.4-inch wide two-door proofer family, sized for one side-loaded rack or two end-loaded racks. It solves a specific problem: a shop that loads end-first and wants two racks proofing behind separate doors, without giving up half a wall to get there. Standard roll-in racks wheel straight in; the proofer supplies the climate, not the racks, which are sold separately.
Two Doors, Separate Access
With a door for each rack position, one rack comes out for the oven while the other keeps proofing undisturbed behind its own magnetic seal. Each door closes automatically, carries a full-width protective bar handle, and opens without dumping the whole cabinet's atmosphere. For a two-rack operation, that access pattern preserves the proof in a way one wide door cannot.
Air-Wash Heat And Humidity
The air-wash system conditions and circulates air through the chamber constantly, holding both rack positions at one temperature and one humidity. PID control eliminates overshoot, the enemy of soft doughs, and the adjustable humidity range covers everything from a wet bagel proof to a restrained climate for laminated pastry. Tubular heaters sit out of the water rather than submerged in it, extending their life across years of daily service.
Cam-Lock Panel Construction
The cabinet assembles from foam-insulated modular panels with cam interlocks, on site, so it fits into rooms and basements that would defeat a one-piece box. Its 300 series stainless interior wears perimeter bumpers against rack strikes, the exterior is heavy-duty stainless steel, and the interior is lighted for instant visual checks. Zero clearance to combustibles at sides and back tucks it tight to the wall. The options list covers a stainless steel floor, the 72610-48 water filtration system, and a correctional package.
