The LBC Bakery LRP2N-80 proofs six racks at a time, side- or end-loaded, or two double racks, in the 58.4-inch wide two-door line. This is commissary and wholesale scale: an entire route's worth of bread rising in one controlled atmosphere while the ovens cycle through it rack by rack. The racks themselves are sold separately.

Two Doors, Separate Access

Working six racks through an oven schedule means the proofer door opens constantly, and that is the argument for two of them. Each door exposes its own zone while the other stays sealed, magnetic gaskets and automatic closers keep the chamber honest between pulls, and full-width bar handles protect the doors from six racks' worth of daily traffic.

Air-Wash Heat And Humidity

At this depth a static heater would proof the middle racks differently than the ends. The air-wash system prevents that by washing every rack position with conditioned air continuously, holding one temperature and one humidity across the load. PID control means no overshoot on recovery after a door opening, so the last rack pulled is as well-proofed as the first, and non-submerged tubular heaters carry the heating load with a service life to match a wholesale schedule.

Cam-Lock Panel Construction

Six-rack capacity in one welded box would never leave the loading dock; the LRP2N-80 instead assembles in place from foam-insulated cam-lock panels. Inner bumpers ring the 300 series stainless interior at rack height, the exterior is heavy-duty stainless steel under an aluminized top, and the lighted interior lets a supervisor read the entire proof through one open door. Zero clearance at sides and back, a level floor, and a factory-authorized start-up are the site requirements. Stainless flooring, 72610-48 water filtration, and a correctional package are on the options sheet.
