Five side-loaded racks, six end-loaded, or three doubles: the LBC Bakery LRP3-50 makes full use of the 102.5-inch two-door format's width at a practical mid depth. Six end-load positions across the face is a workflow of its own, racks marshaled left to right, each one carrying its own product toward the ovens. Standard roll-in racks are used throughout, though none are included; the proofer supplies the climate and the discipline.
Eight-Plus Feet Of Proofing Frontage
The wide-body concept is about access as much as capacity. Six racks all sit in the front row, so pulling the third one requires no choreography with the other five, and the two doors ration climate loss to whichever zone is actually open. Magnetic seals, automatic closers, and full-width protective bar handles handle the mechanical life of a busy face.
Air-Wash Heat And Humidity
Uniformity over a hundred-plus inches of chamber comes from the air-wash system's constant lateral wash of conditioned air. Set one temperature and one humidity and every position honors them, which is what permits mixed loading without mixed results. The PID controller answers door openings with fast, overshoot-free recovery, and the heating comes from tubular elements mounted non-submerged for endurance.
Cam-Lock Panel Construction
On-site cam-lock assembly of foam-insulated modular panels is the delivery model, taking an enormous proofer through normal doors one panel at a time. Rack bumpers line the 300 series stainless interior, interior lighting reaches the whole span, and the heavy-duty stainless exterior tolerates zero clearance to combustibles at sides and back.
