The LBC Bakery LRPR2S-40HO-C is a two-door, double-wide retarder proofer holding four side-loaded racks, three end-loaded, or two doubles, condenser included. This is overnight capacity for a real pastry program: an entire laminating day's output retarded together and proofed together, ready when the shop opens. It accepts standard roll-in racks; none are included.

Oversized evaporators hold humidity high through the cold phase, sparing four racks of shaped dough the crusting that dry refrigeration inflicts. The air-wash system takes the handoff for the proofing phase, distributing warm, humid air across both rack columns so left and right finish as one batch. PID control keeps every transition smooth, and the two doors let the crew pull one column while the other holds its climate behind a magnetic seal and automatic closer.

It requires two separate electrical supplies, four inches of separation from heat-producing equipment, and zero clearance to combustibles at sides and back. Options cover a pre-charged refrigeration system, stainless steel floor, and the 72610-48 water filtration system.
