The LBC Bakery LRPR3-50HO-C Roll-In Retarder/Proofer
Five side-loaded racks, six end-loaded, or three doubles: the LBC Bakery LRPR3-50HO-C is a wide-body, two-door retarder proofer with the condenser included, built to shift a wholesale volume of dough across time. An operation can shape all afternoon, retard everything overnight, and meet the morning with six racks proofing in sequence. The racks themselves are not included.
Retard And Proof In One Chamber
At this capacity the retarder proofer becomes a scheduling instrument: fermentation for the entire early bake is paused and restarted as a block. The refrigeration side is high-output by design, R448A-compatible, equipped with solenoid valves, expansion valves, line dryers, and epoxy-coated evaporator coils, and sized for rapid pull-down so a full load of warm dough chills before it over-proofs.
Humidity That Protects Overnight Dough
Six racks represent too much product to risk surface drying, which is why the evaporators are sized for high humidity operation through the whole cold hold. In proof mode the air-wash heat and humidity system spreads warmth evenly across the full width, and the PID controller executes the cold-to-warm ramp accurately, without overshoot, every night of the week. Door-mounted LED displays keep time, temperature, and humidity readable at eye level.
Built Like a Proofer, Piped Like a Refrigerator
The cabinet cam-locks together on site from foam-insulated modular panels, with a 300 series stainless interior ringed by rack bumpers, a lighted chamber, and a heavy-duty stainless exterior whose two doors carry magnetic seals, automatic closers, and full-width bar handles. Plan for two separate electrical supplies, four inches of clearance from ovens and heat sources, and zero clearance to combustibles at sides and back. A pre-charged refrigeration system, stainless steel floor, and 72610-48 water filtration round out the options.
