Fire Brick Floor with 800°F Maximum Temperature
The fire brick floor absorbs and radiates heat evenly across the cooking surface, which is what gives you consistent browning on the bottom crust without hot spots that burn one side while the other stays pale. Wood fire produces a flavor profile that gas and electric ovens cannot replicate, and the radiant heat from the brick combined with the convection from the wood flame cooks the top and bottom of the pizza simultaneously.
