The LBC Bakery LMO-E Mini Rotating Rack Oven
The LBC Bakery LMO-E is an electric mini rotating rack oven: true rack-oven baking, with rotation and injection steam, scaled to fit an in-store bakery or cafe production corner. Configured with a 6-, 8-, or 10-pan rack, it turns out up to 10 full-size sheet pans, 20 half-size pans, or 20 dozen cookies per load, and because the rack rotates through the airflow, position on the rack stops deciding how anything bakes.
150 Pounds of Thermal Mass Behind the Steam
Small ovens usually fail crusty bread at the steam stage, so LBC gave this one a low-pressure water injection system backed by 150 lb of thermal mass, capable of converting a gallon of water to steam per 20-second cycle. That is enough saturation to set a glossy crust on baguettes, with a programmable vent to dry the chamber on schedule so the crust finishes crisp instead of soft. Tubular electric heaters carry the baking load, and a low-noise air circulation system keeps the front of house calm.
One Oven, Two Kinds of Operator
Single-step mode stores 40 recipes behind 6 quick-select buttons for crew who need one press and a beep. Six-step mode stores 30 staged programs that sequence steam, vent, blower delay, and pulse air for a baker who wants the oven to follow a curve. Large LED displays read from across the room, automatic temperature setback trims energy use between bakes, and the safety-limited torque drive stops the rotation from ever fighting a person.
Made to Reach the Room It Works In
The oven arrives in two pieces and passes through a 34" opening with some disassembly, then sets up with zero clearance at sides and back and 18" above. Double doors open simultaneously and latch against accidental opening during rotation, the inner glass panes hinge out for cleaning, and a full-perimeter silicone seal keeps the chamber tight. Heater power is 208V three-phase with 240V and 480V options, plus a separate dedicated 120V control circuit. Options include S15, S17, and S stands with rack slides that hold 12 sheet pans, a water connection kit, and the 72610-48 filtration assembly. Check local codes on hood requirements.
