The LBC Bakery LMO-G is a gas-fired mini rotating rack oven on a stand, bringing rotating rack-oven results to compact bakeries, cafes, and in-store operations. Rated at 90,000 BTU/hr and indirectly fired with an inshot burner system, it pairs a vertical-tube heat exchanger with a low-pressure water-injection steam system backed by 150 lbs of thermal mass for strong, sustained steam.

Capacity And Rack Options

The LMO-G accepts 6-, 8-, or 10-pan racks. The 6-pan rack uses 5-1/2" spacing, the 8-pan rack uses 4" spacing, and the 10-pan rack uses 3-1/4" spacing, holding up to 10 full-size 18" x 26" sheet pans or 20 half-size pans. The 6-pan configuration also handles 12 strap-pan breads or 30 baguettes, letting a small footprint cover a wide product range.

Gas Heating And Steam

The oven is indirectly fired at 90,000 BTU/hr through an inshot burner system and a vertical-tube heat exchanger that uses natural draft for combustion-air intake and exhaust. A low-pressure water-injection steam system dispenses water onto 150 lbs of thermal mass, producing maximum steam at roughly 1 gallon per 20-second cycle for excellent crust on artisan breads.

Rotation And Door Design

A safety-limited torque-drive rotation system turns the rack gently and reliably, while a low-noise air circulation system keeps the kitchen quiet. Double doors open simultaneously and latch to prevent accidental opening during operation, inner glass panes are hinged for easy cleaning, and a full-perimeter silicone door seal helps retain heat and steam. A brightly lit interior keeps the bake visible.

Controls And Mobility

Large, easy-to-read LED displays anchor a control with two programmable modes: a single-step mode with 40 recipes and six quick-select buttons and a six-step mode with 30 recipes, plus programmable steam, vent, blower delay, pulse air, and selectable automatic temperature setback. The oven mounts on a stand with heavy-duty swivel casters, the front pair locking, and offers natural or propane gas and S15, S17, or S stand options.

Construction And Installation

Built with a stainless steel interior and exterior, the LMO-G must be installed under an approved Type I or II hood with 18" of clearance from the vent collar to the hood filters and includes a field connection for a hood proving switch. It ships in two pieces, fits through a 34" opening with some disassembly, and clears combustibles at 0" at the sides and back and 18" at the top. Oven weight is 1,165 lbs.
